The production of this rare and highly revered micro-lot is overseen by Abayneh Yunnuna at Worka Dembi in partnership with Ashnafi Argaw and the Ardent Coffee Production Team. Yunnuna is also the Director of the Shantagenet Elementary School (Daye Bensa, Ethiopia) which is sponsored by your purchase of this coffee.

This is our second opportunity to work with Yunnuna. Back in 2021 we offered his Damo Carbonic micro-lot which was another knock out.

The carbonic process begins by soaking perfectly ripe cherries in water inside of sealed stainless steel tanks stored at 50F. During this several day phase of production, carbon dioxide builds up in the tank and enhances enzymatic activity. We refer to this process as carbonic maceration. After maceration, the cherry is sun dried, one layer thick on traditional Ethiopian drying beds where it is turned over five days. Total drying time including repose is approximately six weeks.

We have secured 66 pounds of this stunning carbonic, natural process micro-lot.

After repose, we seal this coffee in Grain-Pro barrier packaging and then send on its way to our Roastery where we preserve the green coffee under hermetic seal until it is roasted as part of our Barrington Green Seal Program© .

The Allo Carbonic micro-lot is in limited supply and will be roasted and shipped only on Wednesday of each week.
