This Holiday Season we have two stellar Red Catuai offerings from an amazing new producer in Pasco, Peru called Finca Batán Völler.

Finca Batán Völler is a family run farm that encompasses approximately 20 acres in total. Their cultivation focuses on the classic Peruvian varieties including Red Catuai, Catimor, Nacional and Pache, along with recently introduced Gesha. This year, we have been drawn by two recent Red Catuai variety microlots processed in two very different ways, triple anaerobic and black honey, each possessing a focused and clean yet individual character.

The “triple anaerobic” washed process involves three separate stages of sealed-tank anaerobic fermentation after an initial fully washed process. The effect of this processing lends tartaric intensity and compelling complexity to the cup.

This coffee is produced without the use of pesticides, herbicides, fungicides or synthetic fertilizers.

After repose, this coffee is sealed in Grain-Pro barrier packaging at origin and then sent on its way to our Roastery where we preserve the green coffee under hermetic seal until it is roasted as part of our Barrington Green Seal Program© .
