When it comes to innovative coffee processing, third generation coffee farmer Edwin Noreña is as skillful as he is ambitious. As a quality driven grower, Edwin has jumped wholeheartedly into the cultivation of a broad range of coffee varieties, from old-world Bourbon to new-school Gesha. As a processor, he has pushed the envelop of what can be possible in a coffee cup through pairing a complex processing method with a revered coffee cultivar while still preserving its integrity.
His processing of the Chili Bourbon starts with carefully picked Bourbon coffee that has been Brix sorted for perfect ripeness. After an initial water soak, he then puts the whole coffee cherry into large sealed drums infused with Aji chili mossto (or must) which is a combination of Aji chilis and the coffee cherry must runoff from a previous fermentation batch. This initial carbonic fermentation takes place for 96 hours. The fermented cherries are then removed from the drum and pulped as a Honey Process. The Honey Processed coffee seeds are then returned to the carbonic fermentation tanks and are re-infused with fresh Aji chili mossto for an additional 48 hours. After the secondary carbonic fermentation, the coffee is dried on raised beds for twenty-two days and then set in a relative humidity controlled warehouse for a final 8 days of repose.
Where does Edwin find inspiration for such grandeur? We suspect his educational background in biotechnology and agroindustrial engineering provide some of the fuel for his unstoppable creativity. Extravagant and opulent, Edwin’s results are guided by his core reverence of coffee variety. After repose, this coffee is sealed in Grain-Pro barrier packaging at origin and then sent on its way to our Roastery where we preserve the green coffee under hermetic seal until it is roasted as part of our Barrington Green Seal Program© .
