Perfume aroma with dark chocolate character, vibrant lemon and berry tones accentuated with subtle tropical flavors of pineapple and mango. A Huehuetenango powerhouse filled with fruit tones and Zinfandel structure.
El Diamante is produced by Patricia Perez Diaz on her family farm in Agua Dulce, Hueheutenango. This is our fourth year offering her beautiful coffee. This particular processing lot represents her second full pick of the harvest and it comes from the highest elevations on the farm Paty refers to as “Parte Alta”.
This coffee explores dynamic aromatic territory. Prickly aromas of mango and pineapple with great peaky zing. And the flavors deliver in powerful fashion much like winey bourbon cultivar from Kenya. The prowess of Paty Perez’s terroir and processing both show their muster here in this year’s El Diamante.
After repose, Diamante Perez is sealed in Grain-Pro barrier packaging in Guatemala and then sent on its way to our Roastery where we preserve the green coffee under hermetic seal until it is roasted as part of our Barrington Green Seal Program©.
