Our French Roast is smooth, rich and seductive with a dark chocolate finish.

The Herrera family is legendary in Huehuetenango. Finca Los Cedros was founded by Octavio Herrera in the 1960’s and for 25 years he ran and operated the farm. The name, Los Cedros, comes from the over half a century old cedar trees that grow alongside the coffee trees.

Currently in their second generation, Octavio’s son, Otto, now oversees all of the production on the farm as well as the day to day operations. With each harvest, he pays great attention to separating varieties to creates a broad palate of offerings. He has also developed a particularly well integrated and diverse processing facility including sun, shade and raised drying beds which he employs to fine tune the drying process. This year’s Los Cedros micro lot combines two traditional Guatemalan coffee varieties, Bourbon and Caturra.

After repose, we seal this coffee in Grain-Pro barrier packaging in Guatemala and then send on its way to our Roastery where we preserve the green coffee under hermetic seal until it is roasted as part of our Barrington Green Seal Program© .
