Splashy aroma with concentrated, syrupy body and sweet flavors of cotton candy, peach, orange, strawberry, chocolate and cream. Distinctly fruity while still holding commanding Guatemalan character.
Don Francisco Cardona Martin founded La Colmenita in 2002. His farm is approximately eleven acres in area and is punctuated by breathtaking views. This year’s micro-lot is a blend of two varieties, Bourbon & Caturra. Don Francisco is a true perfectionist and processes his coffee immediately after picking. His fermentation stage lasts for up to twenty-four hours, just prior to sun drying.
Don Francisco has resourcefully constructed his coffee drying patio on the top level of his house with his living space below. The layout is similar to the multiple levels of a beehive. Aptly, the name La Colmenita means “the little beehive”.
After repose, we seal this coffee in Grain-Pro barrier packaging in Guatemala and then send on its way to our Roastery where we preserve the green coffee under hermetic seal until it is roasted as part of our Barrington Green Seal Program© .
In addition to being a stellar coffee producer, Don Francisco also works in consort with the honeybees in San Pedro Necta to produce La Colmenita Coffee Blossom Honey. This year we are excited to be able to offer La Colmenita coffee and honey as our La Colmenita Honey & Coffee Pair.
