Chocolate aroma with assertive, wine-like acidity, flavors of sweet tangerine, green apple, banana, honey and deep tones of oak, resinous spice and fudge. This is a classic Colombian profile, turned up to eleven.
This coffee is produced in the heart of the Andes by smallholder farmers in and around La Union, Colombia. Their farms are located at high altitude in the northwest corner of the Nariño region in southern Colombia, just one degree north of the equator.
The producers of the La Union belong to the FUDAM Association. FUDAM was started by seven farmers back in 1999. Since then it has grown to encompass over 100 grower members. Within their organization they focus their energy on careful, hand processing methods for their coffee, agro-ecology, food safety, companion planting and dairy cow husbandry. Fernando Belalcazar, Armando Popayan, Esperanza Reyes and are just a few of the extraordinary producers who’s coffees have contributed to this years’ La Union harvest.
After repose, we seal this coffee in Grain-Pro barrier packaging in Honduras and send on its way to our Roastery where we preserve the green coffee under hermetic seal until it is roasted as part of our Barrington Green Seal Program© .
