Heady aroma with chewy fruit flavors of stewed blackberry, plum, apple, strawberry, papaya, lemon and orange with complex warming spice flavors of clove, cinnamon and nutmeg that transition into ras el hanout. Deeply pungent and ripe with an herbaceous, earthy finish.
This coffee is produced by the Tapias Canyon Alliance on the Finca Laderas del Tapias. The name of the farm translates to “Hillside of Walls” referring to the profoundly precipitous geography of the area. The Alliance has been together since the early 1980’s and they have constructed their own coffee mill which allows them complete control of the means of their production. In addition, they have their own quality control lab which is under the direction of Q-Grader and agricultural engineer, Cesar Osorio.
They currently produce three primary coffee varieties, Castillo, Caturra and Geisha. This outstanding natural process micro-lot is comprised solely of Caturra. You can learn more about the farm here.
After repose, we seal this coffee in Grain-Pro barrier packaging and then send on its way to our Roastery where we preserve the green coffee under hermetic seal until it is roasted as part of our Barrington Green Seal Program© .
