Vibrant, candy aroma with sweet and spicy flavors of Northern Italian Amaro, peach pie, raspberry, licorice, prickly pear, plum brandy, watermelon slices, champagne grape and chocolate cake. When prepared as an espresso it offers a long, clean, complex finish and lingering texture of a fruit coulis.

The Ballista was crafted as an espresso with impeccable accuracy and keen focus designed to strike the most discerning of palates. When prepared through the high temperature, high pressure brewing process of a pump driven espresso machine it unwraps characteristic Barrington Coffee flavors in a unique flavor package with elegant mouthfeel. Drip it or press it as you see fit. You shall not be disappointed.

The primary component in the Ballista is Worka Chelchele produced by smallholder producers in and around Gedeb in the Yirgacheffe region of Ethiopia. This coffee is natural processed with an extended yeast-assisted fermentation stage and then sun dried on raised beds.

The secondary component in the Ballista is the super chocolaty Cafe Conquista grown by the Sinay-Neves family in Bahia, Brazil. We have worked directly with the Sinay-Neves family since 2000. This coffee is pulped natural (semi-washed) processed and patio sun dried.

After repose, the Worka Chelchele is sealed in Grain-Pro barrier packaging at origin and then sent on its way to our Roastery where we preserve the green coffee under hermetic seal until it is roasted as part of our Barrington Green Seal Program© .
