Perfumed lemon blossom aroma with distinct lemon and lime driven flavors punctuated by 7 Up, lemongrass, ginger chews, Fruit Loops, raspberry, mint, basil, watermelon rind and butterscotch, enhanced by powdery Gesha character of jasmine, lychee and rosewater. Recommended for pour over brewing methods.

This coffee co-ferment with lemon and lime juice is as conversation worthy as it is a pleasure to experience. The Lima Limón Gesha was produced by cousins, Jaider Hermida Cárdenas and Johan David Calderón, on their 3.5 hectare farm, Finca Los Sauces, in Pitalito, located in the Huila region of southern Colombia.

This co-fermentation process began with a depulped preparation of perfectly ripe Gesha coffee. The coffee parchment was then placed in sealed fermentation tanks for 90 hours along with with freshly squeezed, locally grown lemon and lime juice. Tank tops were then removed and allowed to open ferment for 180 hours. The parchment was then washed to remove all residual mucilage and citrus juice and was greenhouse dried on raised beds for 26 days. The entire preparation process took a total of 36 days.

After repose, this coffee is sealed in Grain-Pro barrier packaging at origin and then sent on its way to our Roastery where we preserve the green coffee under hermetic seal until it is roasted as part of our Barrington Green Seal Program© .
