Peaked, creamy berry aroma, with flavors of black mulberry, lychee, plum, strawberry, tangerine, orange zest, lavender, spruce, pinecone, whiskey, chocolate, filbert and cotton candy. This coffee is both tropical and herbal while remaining high toned with a clean finish.

The Damo Carbonic is produced by Abayneh Yunnuna, Site Manager of the Darare Coffee Mill in Bensa, Ethiopia. Perfectly ripe cherries are soaked in water inside of sealed stainless steel tanks stored at 50F. Carbon Dioxide builds up in the tank and enhances enzymatic activity. The cherry is held in this sealed environment for 90 hours. This process is called carbonic maceration. After maceration, the cherry is sun dried, one layer thick on traditional Ethiopian drying beds where it is turned over five days. Total drying time including repose is between 36-40 days.

The result is an ethereal cup that offsets suggestive tropical flavors with herbal tones.

After repose, we seal this coffee in Grain-Pro barrier packaging in Ethiopia and then sent it on its way to our Roastery where we preserve the green coffee under hermetic seal until it is roasted as part of our Barrington Green Seal Program©.
