Sweet, verdant, peppery aroma with a broad, smooth profile that spotlights flavors of toffee, cinnamon, chocolate, tobacco, honey, vanilla, flan and raisin. Equally tasty as a drip coffee or prepared through the espresso machine.

This Holiday Season we have two stellar Red Catuai offerings from an amazing new producer in Pasco, Peru called Finca Batán Völler.

Finca Batán Völler is a family run farm that encompasses approximately 20 acres in total. Their cultivation focuses on the classic Peruvian varieties including Red Catuai, Catimor, Nacional and Pache, along with recently introduced Gesha. This year, we have been drawn by two recent Red Catuai variety microlots processed in two very different ways, triple anaerobic and black honey, each possessing a focused and clean yet individual character.

This coffee undergoes a lengthy and rarely applied preparation process referred to as the “black honey” process. After picking and careful sorting, the coffee seeds are stripped from the coffee cherry without any further washing or wet fermentation. At this stage, the seeds remain covered in fruit pulp. They are then layered on raised beds and covered so that they are not exposed to direct sunlight. This slows down the drying process formidably. Great care must be taken to ensure even drying over the following weeks and the seeds must me perpetually raked and turned to inhibit fermentation. The effect renders complex savory and sweet flavors while retaining a magical acidity and characteristically smooth finish.

This coffee is produced without the use of pesticides, herbicides, fungicides or synthetic fertilizers.

After repose, this coffee is sealed in Grain-Pro barrier packaging at origin and then sent on its way to our Roastery where we preserve the green coffee under hermetic seal until it is roasted as part of our Barrington Green Seal Program© .
