The Honey Process is a refined version of what has been historically called the Pulped Natural process. The Honey Process is different in a number of ways. More fruit is allowed to remain on the shell of the coffee seed and the interaction between the fruit and the seed itself is carefully fostered and evaluated throughout the drying process. And it shows in the cup!
