This month we are offering two coffees that are the very same in so many ways; same producer, same varietal, same altitude, same harvest year. The big difference is how each coffee has been processed. The Santa Rita is a Natural Process coffee that has been dried with the coffee cherry still on the bean. The Cerro las Ranas is a Pulped Natural Process coffee that has had the skin stripped off the bean with a layer of fruit pulp allowed to remain during drying. We love both of the coffees and we want to show them along side one another to illustrate how green coffee preparation can shape cup profile of essentially the same coffee.
